Are you searching for a new recipe to try? Looking for something healthy, but still tasty? You are going to love this spicy butternut squash soup! It’s quick and easy to make and your leftovers can be stored for meals later in the week!

Ingredients:

1 Onion
1 Butternut Squash
2 Red peppers
1 jalapeno
5 cloves of garlic
1/2 TSP Cumin
1 TBS Paprika
1/2 TSP Turmeric
1/4 TSP clove
1 bay Leaf
20 -32 Oz Chicken Broth
1 TSP Salt
4 TBS Olive Oil

Instructions:

1. Heat Olive oil in pot on Medium heat
2. Rough chop Onion, Red pepper, Jalapeno, Garlic
3. Saute Onion, Red pepper, Jalapeno until golden, add garlic and saute for 30 seconds
4. Cube Butternut squash
5. Add in Cubed squash, along with the spices and salt and saute for 2-3 minutes

6. Add chicken broth until vegetables are just barley covered

7. Boil on Medium for 20 minutes or until squash is soft and easily breaks apart
8. Let soup cool for 30 minutes

9. Blend soup with emulsion blender or put it in your blender until smooth
10. Put soup back on the stove to heat it up
11. Add salt and pepper to taste
12. Serve or store for up to a week!

Spice level Tips:
Hot: Make as directed above
Medium: Make as directed above but remove jalapeno seeds
Mild: Remove Jalapeno seeds, saute the jalapeno by itself before adding it in, in a separate pan.
